Ravera Barolo from Novello kept about 60 months in French oak before bottling, listed on the site as Riserva.

Tasting notes

Ruby red with brick reflections. On the nose cherries in spirit and berry jam with a touch of white pepper, typical of this cru and of Novello. Complex nose, then a warm palate with vanilla, remarkably soft and enveloping, with sweet and complex tannins; spice returns alongside the fruit.

Pairs well with

Game, red meats in general, braises and roasts. A good meditation wine; dark chocolate and cocoa-based desserts are a good match.

Vinification
Traditional submerged-cap vinification for 25 days at 30 °C with daily pump-overs and punch-downs. Two months in stainless steel, then about 60 months in French oak tonneaux, then bottle ageing in an underground cellar at a constant 16 °C.
