Metodo classico Alta Langa from Pinot Nero and Chardonnay grown in Rodello, aged on the lees for more than 30 months.

Tasting notes

Brilliant gold with fine, persistent bubbles. Aromatic, elegant and powerful nose with mineral notes, dried fruit and honey. Creamy, fine perlage and a pleasantly soft, savoury palate, with a long citrus finish.

Vinification
Soft pressing, using only the free-run juice. Fermentation in steel at a controlled 13-14 °C for about 28 days, then some months in steel with weekly bâtonnage. Tirage in early spring, with the second fermentation in bottle lasting about 60 days. Ageing on the lees for a minimum of 30 months under the regulations (first disgorgement after 33 months in the vintage described) in horizontal bottles in the underground rooms of the cellar, then manual riddling on pupitres and disgorgement.
