Azienda Giribaldi Barolo Ravera

Single-cru Barolo from the Ravera vineyard in Novello, aged more than two years in French oak tonneaux.

Tasting notes

Ruby red with brick reflections that appear after a few years of ageing. On the nose red fruit, strawberry, cherry and wild berries with a touch of white pepper, typical of these crus and of Novello. Warm vanilla on the palate, red fruit, fairly dry, soft and enveloping with sweet tannins; spice returns alongside the fruit.

Pairs well with

Game, red meats in general, braises and roasts. A good meditation wine; after some years of ageing, dark chocolate and cocoa-based desserts.

Vinification
Traditional submerged-cap vinification for 25 days at 30 °C with daily pump-overs and punch-downs. Two months in stainless steel, then more than two years in French oak tonneaux, then bottle ageing in an underground cellar at a constant 16 °C.
