A pas dose Metodo Classico dedicated to the estate's three grandfathers, all named Giovanni; first made in 2010 in about 2,000 bottles and traditionally previewed on 24 June, the feast of San Giovanni.
Tasting notes
Straw yellow with a fine, persistent perlage. Notes of bread crust, yeast, white flowers and honey; dry with mild acidity.
Pairs well with
Fried fish or vegetables, white meat, raw fish, seafood platter.

- Hand harvested into 20 kg crates, late August, before full ripeness to keep acidity
- Vinification
- Soft pressing after careful selection, must decanted then fermented at a controlled 17 to 18°C in steel. In spring the base wine is bottled with sugar and selected yeasts (liqueur de tirage), then laid down horizontally at 12 to 14°C for at least 18 months for the second fermentation, followed by remuage and disgorgement with no dosage added (pas dose). Aged at least 36 months on the lees in bottle.
