A rose Metodo Classico made purely from Nebbiolo, dedicated to Daniela's mother Maria Teresa; the estate's third sparkling wine, first made in 2011 in about 2,000 bottles.
Tasting notes
This Nebbiolo d’Alba Rosé Spumante Brut presents a delicate pink hue with fine, persistent bubbles, offering aromas of red berries and a hint of bread crust. The palate is dry and crisp, with a refreshing acidity and a clean finish.
Pairs well with
Aperitif, shellfish, sushi and sashimi, Asian cuisine, fish based first and second courses, grilled meat and vegetables.

- Hand harvested into 20 kg crates, late August, before full ripeness to keep acidity
- Vinification
- Soft pressing after careful selection, must decanted then fermented at a controlled 17 to 18°C in steel. In spring the base wine is bottled with sugar and selected yeasts (liqueur de tirage), then laid down horizontally at 12 to 14°C for at least 18 months for the second fermentation, followed by remuage and disgorgement with a dosage of liqueur d'expedition. Dosage 4.3 g/l. Aged at least 24 to 36 months on the lees in bottle.
