Sylla Sebaste Bussia

Single-vineyard Barolo from Bussia, aged 36 months in large oak barrels. The site notes an ageing potential of 12 to 15 years.

Tasting notes

Garnet red with ruby shades turning orange with age. Bouquet of violet, rose and fresh fruit moving to spice. Dry, full, austere but velvety, with a light aftertaste of liquorice and leather and a long finish.

Red meat, national and international, game, braised meats and strongly flavoured cheeses

Vinification
Spontaneous fermentation in stainless steel at 28 °C without temperature control for 15 days, with submerged-cap maceration and daily mechanical pumping at 18 to 20 °C. 36 months in large oak barrels (mix of new and second-passage, 30% new, medium toast), then at least 15 months in bottle. About 5,000 bottles, 14% alcohol.
