Sylla Sebaste Bricco delle Viole

Cru Barolo from the Bricco delle Viole vineyard next to the winery, first made with the 2012 vintage. It is cryomacerated before fermentation and made only in the best years.

Tasting notes

Brilliant garnet with coppery reflections. Red flower petals, plum jam, liquorice, sandalwood and musk. Strong and elegant with marked minerality, a soft texture and mature tannins, and a finish of dark chocolate powder and medlar peel.

Vinification
Five days of cryomaceration at -5 °C, then spontaneous fermentation in steel at 28 °C without temperature control for 15 days, malolactic in steel with daily mechanical pumping at 18 to 20 °C. 36 months in large oak barrels (30% new, medium toast), at least 15 months in bottle. About 3,000 bottles, 14% alcohol.
