Planting density 5,000 to 8,000 vines/ha; yield per vine 500 to 700 g; first vintage 2000; about 5,000 to 6,000 bottles produced
Vinification
Fermented in steel; aged 24 months in used barriques and 20 hl casks, 8 months in steel and 8 months in bottle. Spontaneous alcoholic fermentation without added yeasts, lasting 10 to 30 days; malolactic in steel; wine moved to wood for ageing; not filtered; sulphites at bottling usually under half the legal limit.
Serving temperature
15°C to 16°C; open the bottle 2-3 hours before serving if possible
