- Vinification
- Fermented in steel; aged 12 months in tonneaux (30% new, 70% used) and 25 hl casks, then 8 months in steel. Spontaneous alcoholic fermentation without added yeasts, lasting 10 to 30 days; malolactic in steel; wine moved to wood for ageing; not filtered; sulphites at bottling usually under half the legal limit.
