Vinification
Fermented in steel; aged 15 months in barriques (30% new, 70% used), 5 months in steel and 18 months in bottle. Spontaneous alcoholic fermentation without added yeasts, lasting 10 to 30 days; malolactic in steel; wine moved to wood for ageing; not filtered; sulphites at bottling usually under half the legal limit.
Serving temperature
15°C to 16°C; open the bottle 2-3 hours before serving if possible
