Barolo from the Bussia cru in Monforte d'Alba, from 41 to 61 year old vines, aged 30 months in French and Slavonian oak.

Tasting notes

Medium-deep ruby red with garnet to orange tones. A rush of freshness on the nose, then candied and bitter cherries, plums, strawberries and raspberries, with darker chocolate, hazelnut and liquorice, herbs, cinnamon and vanilla. Suited to ageing for fifteen years or more.

Pairs well with

Meat, game such as wild boar, and intensely flavoured dishes with mature, spicy cheeses

Vinification
Manual harvest in crates, destemmed, four pump-overs a day in the first week and two a day in the second, 15 to 18 days of maceration. After racking and malolactic fermentation it rests 30 months in a mix of new and old French barriques and Slavonian oak barrels. Six months in bottle before release.
