Monferrato Bianco made from 100% Sauvignon Bianco grown across two young, north-east-facing vineyards, Giribaldi and Ferro di Cavallo.
Tasting notes
Straw yellow with faint green highlights; intense bouquet of hay, gooseberry and nettle with hints of white peach in the background; warm, enveloping palate, balanced, with a savoury finish.
Pairs well with
Vegetable appetisers, fish with sauces, shellfish, herb frittata.

- Blend of two vineyards: 'Giribaldi' (0.6 ha, 5,000 vines/ha, planted 2002 and 2005) and 'Ferro di Cavallo' (0.4 ha, 4,600 vines/ha, planted 1997), both north-east facing; yield about 70 q/ha (50 hl/ha). Made from recently planted vineyards, on lime-rich soil with a not too sunny exposure that suits the variety.
- Vinification
- Cold-macerated on the skins for 24 hours before fermentation to extract aromatic compounds, then gently pressed; must fermented at 17°C in stainless steel. Aged 5 months in steel on the lees, then lightly clarified and filtered, plus 2 months in bottle.
