- Vinification
- Each vineyard is harvested, vinified and aged separately. Maceration 10 to 16 days, partly in submerged-cap rotary fermenters, partly in open-top vats, then spontaneous malolactic fermentation in steel. Aged 36 months in unroasted French oak conical vats of 25 to 50 hl, blended at the end and bottled unfiltered, with 6 to 12 months more in bottle.
