Vines with an average age of about 50 years, on a roughly one-hectare plot in the commune of Nizza Monferrato.
Vinification
Hand-harvested grapes are crushed and fermented at controlled temperature with about 15 days of maceration; after racking the wine ages 18-24 months in small oak barrels, then rests about 6 months in steel before bottling, followed by at least a further 6 months of bottle ageing at 20C.
