A warm, harmonious Ruche with light tannin and a long finish, suited to structured or spiced dishes.

Tasting notes

Warm on the palate, harmonious, full-bodied and balanced with a light tannic component; very long finish, both gustatory and aromatic.

Pairs well with

Pairs well with aged and blue cheeses and egg pasta first courses; also suited to red meats, whether slow-cooked stews or roasts, and to structured or spiced white meats such as curry or mustard preparations.

Hand-harvested grapes are crushed and fermented at controlled temperature with about 10-12 days of maceration; after fermentation the wine clarifies by static decanting until end of winter, then rests in steel tanks until the following summer, when it is bottled, followed by about a month of bottle ageing.
