Langhe Chardonnay Utinot from La Morra, part-fermented and aged in French barriques with lees stirring, bottled unfiltered. About 5,000 bottles produced.

Tasting notes

The Langhe Chardonnay Utinot presents a brilliant straw-yellow color, with an inviting nose of ripe apple, pear, and subtle notes of toasted almond. The palate is crisp and refreshing, with a balanced acidity and a clean, mineral-driven finish.

About 5,000 vines per hectare, Guyot-trained with medium-short pruning of 8 to 10 buds; thinned to reduce yield per vine by about 30%.
Vinification
The harvested grapes rest a few days in cold storage at 0°C, then are gently pressed in temperature-controlled steel tanks and macerate for 24 to 36 hours; after pressing and cold settling the must is moved to French barriques, up to 10% new, to finish the fermentation begun spontaneously at 15°C in the steel tanks. The wine ages on its lees with batonnage for 5 to 6 months without racking; after 9 to 10 months, once blended back in steel, it is bottled unfiltered and aged a further 8 to 10 months.
