Vineyard planting
About 6,000 vines per hectare, Guyot-trained with medium-short pruning of 6 to 7 buds; thinned to reduce yield per vine by about 30%.
Vinification
The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 26 to 28°C and maceration lasts 5 to 7 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages an initial 6 months in stainless steel, then rests a further 5 to 6 months in bottle after bottling.
