Vineyard planting
About 5,500 vines per hectare, Guyot-trained with medium-short pruning of 7 to 8 buds; thinned to reduce yield per vine by about 30%.
Vinification
The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 30 to 31°C and maceration lasts at least 30 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages 30 months in large French oak cask, then rests a further 8 to 10 months in bottle after bottling.
