Vineyard planting
About 5,500 vines per hectare, Guyot-trained with medium-short pruning of 7 to 8 buds; thinned in two passes to roughly halve the yield per vine.
Vinification
The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 30 to 31°C and maceration lasts 30 to 35 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages an initial 6 months in new French barriques (10% new), then a further 22 to 24 months in large cask; after bottling it rests a further 10 to 12 months in bottle.
