Vinification
The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 26 to 28°C and maceration lasts 5 to 7 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages 6 to 8 months in steel, then rests about 6 months in bottle after bottling.
