Alta Langa Blanc de Blancs is Colombo's single-varietal Chardonnay Metodo Classico under the Alta Langa DOCG, aged at least 30 months on the lees.
Tasting notes
Bright, crystalline straw yellow with golden, green highlights and a fine, persistent mousse. The bouquet opens with white flowers such as acacia and vanilla against flinty minerality, crisp green apple and lemon zest, then acacia honey and freshly baked croissant. On the palate a vibrant, cutting acidity typical of Chardonnay gives dynamism, with a silky perlage, savoury minerality and a long finish of custard cream and honey.

- Vinification
- Grapes sorted a second time in the cellar to select only the best berries, very gentle pressing, static clarification of the free-run must, then alcoholic fermentation at controlled temperature in stainless steel. Secondary fermentation follows the Metodo Classico in bottle for about 80 days in Colombo's cool underground cellars, then a minimum of 30 months on the lees.
