Cascina Montagnola's pure Timorasso, Colli Tortonesi Timorasso, from a single estate vineyard, aged about a year in steel on the fine lees before further bottle age.
Tasting notes
Intense, bright straw yellow with lovely green tinges. Fine, intense and highly complex on the nose, with clear notes of ripe plum, citron and fresh hazelnut, and attractive mineral nuances. Richly structured on the palate, well balanced, with good acidity supporting the higher alcohol content, long and persistent.
Pairs well with
Raw shellfish and seafood, first courses such as fish ravioli, chicken or turkey scaloppine, medium-aged cheeses (excellent with a young Montebore).

- Predominantly clay soil on a marl-clay substrate.
- Exposure
- South to south-west facing, at about 150 to 160 metres above sea level.
- Harvest
- Hand-picked into 15kg crates, in the third ten days of September.
- Vineyard planting
- Timorasso was first planted on the estate in 2003.
- Vinification
- Gentle pressing, followed by static cold settling of the must and a slow fermentation at controlled temperature. The wine then matures in steel tanks for about 12 months, alternating racking with periods of ageing on fine lees; after bottling it evolves for a further year in glass.

- 10 to 12°C, in large glasses.
