White
Morassino
By Cascina Montagnola, Colli Tortonesi, Piemonte, Italy
A richer, more concentrated selection of the estate's Timorasso, from a small parcel picked later and with reduced yields, aged nearly two years on the lees before bottling.
Tasting notes
Intense straw yellow with golden nuances. Wide-ranging, varied and highly elegant on the nose, with notes of ripe plum, russet apple, candied citron, bay leaf and wildflowers; once the glass opens, alluring nuances of aromatic herbs (thyme, sage) and almond also emerge. Extremely rich and full on the palate, of endless persistence; the alcohol and considerable residual sugar spread over a juicy acidity, wrapping it in pure velvet for a perfectly harmonious, balanced taste.
Pairs well with
Medium and long-aged cheeses, but also wonderful with dishes such as green lasagne with asparagus, savoury tarts and white meats.
Technical details
- Style
- White
- Grape
- Timorasso 100%
- Production area
- Made from a small parcel of the estate's Timorasso vineyard, set aside in an exceptionally fine vintage marked by a long warm, dry spell and unusually wide day-night temperature swings, to produce an even richer, more concentrated wine; yields were reduced further than for the normal bottling.
- Soil
- Predominantly clay soil on a marl-clay substrate.
- Exposure
- South to south-west facing, at about 150 to 160 metres above sea level.
- Harvest
- Picked by hand into crates on 10 October, about three weeks after the normal picking date.
- Vinification
- Gentle pressing, followed by static cold settling; fermentation then proceeded slowly and continuously, stopping naturally after about 50 days. The wine matured on its fine lees for about 20 months in a steel tank held at a constant 10°C, then was bottled after a light final filtration.
- Serving temperature
- 10°C, in large glasses.
