100% Nebbiolo from the Paolin cru in Neive, aged 30 months in bottle after maturation in 30 hl Slavonian oak, vinified the same way as the Rabajà to show the two sites' natural differences.
Tasting notes
This Barbaresco Paolin shows a bright garnet color, with an expressive nose of red berries, violet, and a touch of minerality. The palate is medium-bodied and refined, with elegant tannins and a fresh, persistent finish.
Pairs well with
Ideal with red meats, roasts, game, and aged cheeses.

- Vinification
- Approximately 40 days in cement cisterns, the first 8 days with frequent racking for strong extraction, the remaining days resting gently to extract noble tannins for good development and ageing. Malolactic fermentation and maturation in 30 hl Slavonian oak barrels for structure, elegance and Nebbiolo's characteristic austerity. Aged 30 months in bottle. The producer notes it is vinified the same way as the Rabajà, to bring out the subtle natural differences between the two sites.
