Tasting notes
Wide structure, with tannin and fruit well above average. Ruby tending to violet, rich in enveloping, velvety aromas of morello cherries and vanilla; warm and soft on the palate.
Pairs well with
Flavourful, substantial dishes: pasta or rice first courses and all kinds of meat, grilled, roasted or stewed.

- Destemming and soft crushing with low sulphur dioxide. Fermentation on the skins for 14 to 16 days at 28-30°C with daily pump-overs. Malolactic fermentation in stainless steel. Matures in 225-litre oak barriques for at least 18 months.
