A barrique- and cask-aged Barbera d'Asti Superiore, 14% abv, named in 1997 for the second daughter of Franco Cavallero. Sold as a versatile table wine.

Tasting notes

Straightforward aroma recalling chocolate and cherries. Dry, pleasantly bitter on the finish, full and harmonious on the palate.

Pairs well with

Hot starters, rice, pasta and all kinds of meat; agnolotti with different fillings and slow-braised dishes.

Vinification
Fermentation on the skins for 12 days at 28-30°C. Malolactic fermentation in stainless steel. 80% of the wine matures in 500-litre tonneaux for about 12 months and 20% in 225-litre French oak barriques; the woods are then blended and rest a further six months in 3,000-litre oak casks.
