Vinification
After destemming and crushing, the must goes to ferment with the skins, which over a long contact time give colour, tannin and varietal aroma. Maceration lasts 15 to 30 days depending on the vintage. After malolactic fermentation the wine matures in oak barrels, then is bottled under controlled atmosphere. Minimum overall ageing is 2 years from 1 January after the harvest. It matures in oak barrels for at least 10 to 11 months, followed by at least 8 months in bottle before release.
