Vinification
After destemming and crushing, the must ferments with the skins in stainless steel tanks; maceration lasts 7 to 10 days depending on the vintage. After alcoholic and malolactic fermentation the wine matures about 12 months in barriques, is bottled under controlled atmosphere and rests at least 12 months in bottle before release.
