Tasting notes

Colour: clear, with bright pink reflections, and a fine, persistent perlage. Nose: bread crust and yeast alongside the primary, austere aromas of Pinot Nero, enhanced by the long ageing. Palate: dry, elegantly complex and savoury, lifted by marked acidity; fine, delicate, intense.

Pairs well with

Ideal as an aperitif and throughout the meal

Vinification
Whole bunches go straight into the press after a second hand sorting, with a soft pressing. The free-run must settles and ferments in temperature-controlled steel tanks. The base wine stays on its fine lees with battonage, and the cuvée is made from base wines of the same vintage. The second fermentation starts in bottle the following spring, followed by more than 36 months on the lees in temperature-controlled rooms, then remuage and disgorgement a la glace. Extra Brut.
