Dilva is Ada Nada's dosaggio zero Metodo Classico, made entirely from Nebbiolo and aged over 18 months on the lees.
Tasting notes
Rose petal colour with a fine, plentiful perlage. Fine and clear on the nose, with raspberry, forest fruit and rose notes closing on toasted tones. A crisp sparkle gives way to good mineral balance, with a deep, persistent, savoury finish.

- Hand-harvested in the last fifteen days of August
- Vinification
- Grapes are pressed directly under dry ice protection with static decanting, then ferment at 14-15°C. Ages 4 months in barriques before tirage in spring; prise de mousse in bottle takes 20-25 days at 16°C, followed by at least 18 months sur lattes with regular riddling by hand (coup de poignet). Disgorged with dosage added, then rests a further month. About 2,500 bottles and 250 magnums produced.
