100 is Ada Nada's Brut Metodo Classico, made entirely from Nebbiolo and named as a nod to the estate's multi-generational history.
Tasting notes
Straw yellow with brilliant golden highlights and a fine, abundant perlage. Fragrant on the nose, with floral hints, light spice and suggestions of yeast. Smooth and soft on the palate, with lively acidity supporting well-integrated bubbles and a clean, saline finish recalling yeast.

- Hand-harvested in late August and the first days of September
- Vinification
- Grapes are gently pressed under dry ice protection to avoid colour extraction, then undergo static decanting before fermenting at 14-15°C. After a few months' ageing, tirage takes place in spring; secondary fermentation in bottle lasts 20-30 days at 16°C, followed by extended ageing sur lattes until disgorgement, when the dosage is added. About 2,000 bottles produced.
