A traditional method sparkling wine made entirely from Colli Tortonesi Timorasso, disgorged with no dosage after long ageing on its lees.
Tasting notes
Straw yellow, with intense, varied aromas typical of Timorasso such as hay and ripe pears, blended with notes from the extended ageing on the lees; pleasantly dry, mineral and rich on the palate.

Appetisers, fish dishes, shellfish and seafood.

- Around mid-August.
- Vinification
- Made by the traditional method from Timorasso grapes of the Colli Tortonesi. The grapes are harvested in crates around mid-August and gently pressed to extract only the free run juice, then vinified at a controlled temperature. After an initial ageing in stainless steel on its fine lees, the wine goes to tirage for its second fermentation, carried out at the spring new moon, then undergoes bottle refermentation and extended ageing on the lees in stacks until disgorgement.
