The Riserva version of the estate's Alta Langa, led by Chardonnay and aged at least 60 months on its lees before riddling and disgorgement.
Tasting notes
Intense yellow with a fine perlage, complex and full bodied with a delicate bouquet, rich and persistent on the palate with well balanced acidity.
Pairs well with
Beef consommé, shellfish, octopus or sea bass, fried artichokes and cardamom mousse.

- Vinification
- Made by the traditional method. The grapes are harvested around mid-August and brought to the winery in crates for gentle, progressive pressing. The must is fermented in barriques at a controlled temperature until the sugars are fully fermented; after an initial coarse racking the wine ages on its fine lees. The following spring the base wine is blended with sugar and selected yeasts and bottled, then stored in a cool, dark place for secondary fermentation and left in contact with its lees for a minimum of 60 months. The bottles are then moved to pupitres for traditional manual riddling before disgorgement, topping up with the same wine and resealing.
