A riper, Superiore designated Barbera d'Asti from a stricter grape selection, aged in large oak and second use barriques for a fuller style than La Prüma.
Tasting notes
Deep ruby red with delicate orange hues from extended ageing, an intense and persistent bouquet of vanilla, ripe red fruit and boise, full bodied on the palate with well balanced acidity.
Pairs well with
Stews, roasted red meats, game and aged cheeses served with polenta.

- After an initial green harvest, the grapes are hand-harvested in crates for further careful selection. At the winery they are destemmed and gently crushed to increase skin contact during alcoholic fermentation, which begins in stainless steel tanks at a controlled, constant temperature until all the sugars are fermented. The wine is then racked off its coarser lees and rests on its fine lees, which, together with the constant storage temperature, promotes malolactic fermentation. It is aged in 25 hL oak barrels and partly in second use barriques, then ages further in bottle before release.
