Tasting notes
Pale yellow with a fine, persistent perlage, a refined, full bodied yet delicate bouquet, and fresh, well balanced acidity that pairs with a bread crust finish.

- Vinification
- Made by the traditional method. The grapes are harvested around mid-August and brought to the winery in crates for gentle, progressive pressing. The must ferments in stainless steel at a controlled temperature until the sugars are fully fermented; after an initial coarse racking the wine ages on its fine lees. The following spring the base wine is blended with sugar and selected yeasts and bottled, then stored in a cool, dark place for secondary fermentation and left in contact with its lees for a minimum of 33 months. The bottles are then moved to pupitres for traditional manual riddling before disgorgement, topping up with the same wine and resealing.
