Timian
By Massimo Pastura - Cascina La Ghersa, Asti, Piemonte, Italy
A Timorasso from a vineyard at Casasco in the Colli Tortonesi, made since 2006 in collaboration with Walter Massa. Part of the Vigneti Unici selection.
Tasting notes
Brilliant golden yellow, deepening with bottle ageing. Very complex and enveloping nose: loquat and green apple in the early years, white flowers, medicinal herbs, honey and hay, with a delicate mineral vein and, after some years, hydrocarbon notes. Warm, elegant and enveloping on the palate, very fresh thanks to lively acidity, with a robust structure and typical minerality. Savoury, citrusy, very long finish.
Pairs well with
Hot, savoury starters, fish dishes, first courses and white meats; soft, fresh or medium-aged cheeses. Piedmontese pairings: cardoon flan with fonduta, pear pastry with hot gorgonzola cream, ravioli del plin in roast gravy, Montebore cheese.
