Moscato d'Asti 100 Giorni

A 100% Moscato from a 0.4 ha vineyard in Coazzolo, fermented in autoclave and stopped at 5.5% alcohol with about 120 g/l residual sugar.
Tasting notes
Straw yellow. The fragrant aroma typical of the grape gives elegant, musky scents with notes of sage, orange and peach. On the palate sweet and fresh, with a savoury finish.

- Vinification
- After careful hand selection, the whole grapes are gently pressed. The must is clarified, filtered and rested in a cold room at 0 °C for about 20 days. Fermentation takes place in autoclave at 14-16 °C and is stopped at 5.5% alcohol and 2.5 bar of pressure by bringing the temperature to -4 °C. Residual sugar is around 120 g/l. The wine stays in autoclave about 40 days at low temperature and 2.5 bar overpressure.
