- After careful hand selection and a soft crushing and destemming, the Nebbiolo macerates for 18 hours at about 10 °C. The liquid is then drawn off the skins (saignée method) and fermentation finishes over about 14 days at 17-18 °C. The wine ages about six months in fourth-passage French oak barriques on fine lees (battonage), is racked in February, filtered and bottled in March, then rests two months in bottle before release.
