Sansoero

Sansoero is Grignolino, a Piemontese variety native to the Monferrato Astigiano, whose name likely derives from the dialect word for the grape's abundant seeds.
Tasting notes
Light ruby red colour, delicate aroma of violet, rose and raspberry. Full, slightly tannic flavour with a pleasing almond finish.
Pairs well with
Appetizers, salami and cold cuts, pasta dishes, white meats, oven-baked or smoked fish.

- Manual harvest in September, after light cluster thinning in August
- Vinification
- Cold maceration of the crushed grapes for 6-7 days at 8-10°C to extract colour and varietal aroma. Temperature is raised to 20°C to begin fermentation, peaking at 24-25°C, with the wine drawn off after 1-2 days. Malolactic fermentation and refining in stainless steel through spring.
