- Vinification
- An ancient winemaking method recently revived: skin-macerated white wine fermented in amphora, now known as orange wine. This specific vinification gives distinctive flavors and colors (not orange, but a white wine with a deeper color) because the skins release substances that make the wine more complex on both the nose and palate. It is a traditional, rustic method that had disappeared with the arrival of new machinery.
