A frizzante rosé made by the ancestral method: fermentation is stopped before bottling and finishes, with its sparkle, in the bottle itself, with no added sugar or yeast.
Tasting notes
Wild strawberry meets raspberry, wilted rose, sage and a base of toasted bread crust on the nose. Full and dry on the palate, very savoury, with a refreshing acidity. The producer suggests resuspending the sediment 10 minutes before opening.
Pairs well with
Fish first courses, rice salads, or grilled meat and vegetables.

- Made by the metodo ancestrale: a light pressing of the grapes extracts the natural yeasts present on the skins, followed by fermentation in temperature-controlled stainless steel. Fermentation is first slowed and then stopped, to resume after bottling with no further addition of sugar or yeast; the enzymes and yeasts sealed in the bottle build up the CO2 that gives the wine its sparkle.
