Cantico, also labelled Derthona on the bottle, is Daglio's Colli Tortonesi Timorasso: unracked, unfiltered and unsulphured, resting over 12 months on its lees before bottling the year after harvest. Also sold in magnum.
Tasting notes
Dried vine leaf, flint and field herbs on the nose. Warm and enveloping on the palate, with a long, saline finish. Its aromatic and mineral intensity peaks after 6 to 7 years' bottle ageing.
Pairs well with
Raw shellfish, chargrilled fish and white meat dishes.

- Timorasso is an entirely autonomous grape variety documented since the Middle Ages, nearly wiped out by phylloxera, rural depopulation and the difficulty of growing it, and almost abandoned during the Second World War for more profitable varieties. Now widely recovered by growers of the Consorzio Piemonte Obertengo. The wine is kept by its own noble lees, periodically stirred back into suspension, over more than 12 months' rest in the cellar, with no racking, filtration or added sulphites, and is bottled only after the following year's harvest.
