Nibiö is Daglio's wine from an old, small-berried Dolcetto biotype native to the Tortona area, vinified simply in cement and bottled only after 12 months' ageing.
Tasting notes
Ripe black fruit with an intense spiciness on the nose. Firm but ripe tannin on the palate.
Pairs well with
Traditional bolliti and stews; in the Tortona custom, plain agnolotti with the wine poured straight over them.

- Vinification
- An old, small-berried clone with a red stem, phenotypically distinct from the selected Dolcetto clones and still carrying its old characteristics. Looser, smaller bunches and naturally low yields favour quality; vinification is simple and rigorous, still carried out in cement vats. Ageing in cask means it can only be bottled after 12 months, and it is best tasted after a year in bottle.
