100% Dolcetto from the single Sori dei Crava parcel above the farmhouse, a steep, sun-exposed hillside that gives the estate's most structured basic Dolcetto.
Tasting notes
Deep ruby red with violet highlights. Wild cherry, sour cherry and red berries in liqueur, with light notes of tea, hay and almond. Dry and enveloping, with a tannic structure that sustains a long, almond-flavoured finish.
Pairs well with
Piedmont-style raw meat, warm antipasti, vegetable flans, Parmesan cheese and pasta.

- Single parcel named Sori dei Crava in Diano d'Alba; the vineyard occupies almost all of the Sori and is divided into six parcels, all planted with Dolcetto, four hectares in total, planted in different years mainly with clones CN22, CN69 and CVT8 plus older mass-selection clones.
- Soil
- Lean, dry clay-limestone soil, light in colour, with layers of compact sand alternating with grey sandstone.
- Exposure
- South-westerly, altitude 350 m a.s.l.
- Harvest
- By hand into crates in mid-September, when fully ripe.
- Vineyard planting
- Espalier vineyards with Guyot pruning, average density 4,500 vines per hectare.
- Vinification
- Destemmed grapes are vinified in temperature-controlled steel tanks with about 7 days' maceration depending on the vintage, with pumping-over throughout, then spontaneous malolactic fermentation and cold tartaric stabilisation over winter. Rests in steel until the summer after harvest, racked several times for natural settling, and bottled that summer.
