100% Favorita left to wither partially on the vine and then further dried in crates before pressing; made only in exceptional vintages, so far 2007, 2013 and 2016.
Tasting notes
Golden yellow with amber highlights, bright and viscous. Dried figs and dates, with hints of aromatic Mediterranean herbs and acacia honey. Ample and harmonious on the palate, with sweetness and acidity in balance and a long, persistent finish.
Pairs well with
Blue or mature cheeses, desserts, biscuits and pastries, and chocolate.

- A few rows of the estate's own vineyard in Diano d'Alba.
- Soil
- Clayey and fairly calcareous sandy soil.

- South, south-westerly, altitude 340 m a.s.l.
- Harvest
- Depending on the vintage, grape and leaf thinning create the best conditions for partial on-vine withering; grapes are then hand-harvested into small perforated boxes, laid in a single layer, stacked and moved to the fruttaio (drying room) to dry further without forcing.
- Vineyard planting
- Espalier vineyards with Guyot pruning, average density about 4,000 vines per hectare.
- Vinification
- Direct pressing of the whole withered grapes, followed by slow alcoholic fermentation at low temperature. Ages in tank in contact with its fine lees until natural settling, then in bottle.
- Serving temperature
- 10-14°C
- Storage
- Gains complexity with age, becoming more dynamic and progressive over the years.
