Cinzia and Massimo's project since 2010: a Metodo Classico sparkling made from the tips of Nebbiolo bunches, vinified white, resting on the lees for 48 months before release.
Tasting notes
Visually: brilliant straw yellow colour, persistent perlage with fine and abundant bubbles. Olfactory: noble aromas of pastries, hazelnut, bread crust and freshly ground coffee, with background notes of apple, grapefruit and still fragrant flowers. Flavour: pleasant tonicity thanks to an energetic, invigorating acidity and a lively, savoury finish from Gattinara's rocky soils.
