- Hand-picked, destemmed and crushed; fermented in steel with selected yeasts at controlled temperature, 27 to 28 °C for 7 to 10 days with frequent pump-overs and delestage; malolactic at 20 °C in steel; in steel until early March, then 12 months in new 15-hectolitre French oak barrels (medium toast, 100% new). 14.5% vol, residual sugar about 2 g/l.
