Intense ruby red; marked red fruit on the nose and spicy notes on the palate.

Traditional Piedmontese dishes, especially meat and game; fresh and strong cheeses; festive meals such as lentils with zampone or wild boar roast

- Destemmed, crushed and fermented in concrete and steel tanks with selected yeasts at 25 °C for about 15 days with frequent pump-overs and delestage; malolactic in steel; 2 to 3 months in steel. 13% vol, residual sugar about 1 to 1.4 g/l, total acidity about 5.5 g/l.
