A 100% Cortese Gavi DOCG from the Rovereto hamlet of Gavi, aged two years on its own lees in steel with a final batonnage.
Tasting notes
Intense straw yellow with greenish highlights. Very fine on the nose, with elegant nuances of aromatic herbs (hawthorn, acacia, bergamot, sage). Enveloping and soft on the palate, full and articulated, with a beautiful structure and length and a fresh, clean finish.
Pairs well with
Shellfish, aged cheeses, elaborate white meats.

- Guyot pruning, grassing (cover crop) between the rows and minimal deep soil tillage; targeted fungicide treatments only when needed.
- Vinification
- Soft pressing of the grapes, slow fermentation in thermo-controlled steel tank with selected yeasts. Natural decanting and further rackings, always in steel, with a final batonnage to keep the noble lees in suspension; aged two years on its lees without racking. Cooled to -3C in a thermo-controlled tank, then final filtration before bottling.
