Salluvii is Castellari Bergaglio's entry-level Gavi DOCG, a 100% Cortese blended from several plots across the Gavi zone with differing soils; the name comes from the ancient people who once inhabited the area.

Already very enjoyable from the spring after harvest, reaching its best after some months of bottle ageing.

- Vinification
- Grapes transferred to the cellar immediately and gently pressed to extract only the best part of the juice. Fermentation, temperature-controlled at 18-20°C to preserve the Cortese di Gavi's typical aromatic richness, proceeds slowly over about 20 days. Bottled in February and March to allow a minimum of bottle ageing before release.
